We built this bakery list from the menus, price lists, hours pages and about pages each shop publishes, all reread on October 30 and 31. To make the cut a bakery has to bake in its own kitchen, sell to walk-in customers and keep its hours current online. The ranking rewards range and craft we can see on paper: laminated pastry and gluten-free options at Pistacia Vera, hearth bread at Dan the Baker, an all-vegan cooperative case, and old family donut counters that have outlasted generations. Placement weighs how much a menu shows beyond the basics. We have not tasted from these cases for this update, and none of the shops were phoned.
Pistacia Vera on Third Street in German Village marks its menu with gluten-free, nut-free and egg-free codes, and its macarons, at $2.50 each, carry the gluten-free tag. A classic butter croissant is $4.50, and the croissant dough reappears as the bun for savory plates such as a $14.50 rye croissant with cold-smoked salmon. Quiches like potato raclette run $13.50, and a salted pistachio latte is $12. The shop opens at 7 a.m. on weekdays and 8 a.m. on weekends, closing at 3 p.m. daily.
